I’ve always loved cooking for my family and trying new flavors and foods from time to time is one way I made sure my creativity never bombed out. It’s easy to feel tired of cooking when you do it three times a day – especially for a large family. When my kids were still at home, I spent hours in the kitchen every single day.
No-cook meals gave me a reprieve from the stove and often made for quick meals that were easy to get on the table.
Cool and refreshing salads
I’ve always been a huge fan of salads – even in the cooler months. When the temperature soars, nothing beats a crisp salad for dinner. Use fresh, seasonal summer vegetables to create a refreshing and satisfying meal.
Salads are a great way to use summer’s fresh produce. Try chopped bell peppers, peaches, mangoes, or avocado slices. For a Mediterranean touch, make a Greek salad with feta cheese, Kalamata olives, and a tangy vinaigrette.
My go to salad in the summer is a Watermelon Salad with feta, black olives, and onion.
Or go classic and elegant with a Caprese salad, layering fresh mozzarella, juicy tomatoes and fragrant basil drizzled with olive oil. Craving Southwest flavors? Mix black beans, corn, chopped red onion, and cilantro with a lime dressing, then top with tortilla chips for crunch.
To turn your salad into a complete meal, add a protein source like rotisserie chicken, which can be easily shredded and added to your salad. Another quick and easy protein option is deli meat, such as roasted turkey. Roughly chop the meat and add it to your salad to boost protein and flavor; no cooking is required.
For vegetarian options, use protein-rich ingredients like chickpeas, tofu, or black beans. Add variety with toppings like crumbled feta or goat cheese, and include nuts and seeds like almonds, walnuts, or sunflower seeds for a satisfying crunch.
Chilled soups
Who says soup is just for winter? I have a recipe for strawberry soup that’s out of this world. Serve it alonside a crisp salad with a fruity vinegarette and you have a perfect, light summertime meal.
Chilled soups are perfect for hot summer days, providing a refreshing escape from the heat. They’re simple to make with just a blender or food processor, allowing you to whip up a delicious chilled soup in minutes.
Gazpacho, a classic Spanish dish, is a perfect example. This vibrant soup mixes tomatoes, cucumbers, and bell peppers for flavor and hydration. If you’ve never had it, you should try it this year!
Enjoy summer flavors with a chilled cucumber-dill soup. This light and refreshing soup recipe is perfect for a hot afternoon. All you do is blend cucumbers with yogurt, fresh dill, and lemon juice then chill and serve!
Chilled soups are also perfect to serve at a ladies luncheon, women’s ministry meeting, or brial shower.
Wraps and sandwiches
Wraps and sandwiches make convenient no-cook dinners because they’re so easily customizable. You can fill them with endless possibilities, from classic combinations like turkey and cheese to adventurous options like avocado and sprouts. And wraps can be filled with kid-friendly ingredients that are sure to please even the pickiest of eaters.
For simple protein options, rotisserie chicken and deli meat are delicious, but you can also use canned options like chicken, tuna or salmon. Hummus, edamamae, and chickpeas are great vegetarian options. There’s no need to cook anything before adding these to your sandwich or wrap.
Experiment with various spreads such as pesto, hummus, salad dressings, or flavored mayonnaise to enhance the flavor of your sandwiches. Get creative with different proteins, cheeses, and toppings to ensure your sandwiches aren’t boring!
But you know what my favorite sandwich is in the summertime? A classic tomato sandwich with mayonnaise on toasted white bread! It’s a classic sandwich here in the south.
Use leftovers creatively
Don’t let leftovers sit in the fridge—turn them into delicious and satisfying no-cook meals. Here are a few ideas to inspire you.
Grilled or Roasted Chicken
Grilled chicken, chopped and mixed with mayonnaise, celery, red onion, grapes, and slivered almonds, creates a delicious chicken salad that’s a timeless favorite.
Steak
Use thinly sliced leftover steak to make easy no-cook fajitas. Warm tortillas in the microwave, then fill them with steak, shredded cheese, chopped lettuce, pico de gallo, and your favorite salsa.
Pot roast
Diced leftover pot roast gets a new life in a protein-packed power bowl. Mix it with fluffy quinoa, chopped vegetables such as bell peppers and corn, black beans, and a light vinaigrette dressing for a satisfying and complete meal.
These are just a few examples to spark your creativity. Leftover meat can be chopped and added to a chilled noodle salad, leftover grilled vegetables can be tossed into a quinoa salad, or leftover grilled tofu can be crumbled and used in a taco bowl.
Breakfast for dinner
Prepare overnight oats for a sweeter option. This no-cook breakfast is ideal for warm summer nights. Simply prepare everything in advance and chill it in the refrigerator until ready to eat.
Mix rolled oats with milk, fruits, nuts, and sweeteners of your choice, then let it sit for a few hours for a delicious, no-cook meal. Customize your overnight oats with endless flavor combinations—try classic strawberry and banana, or more adventurous options like peanut butter and jelly, or chocolate and coconut.
Top with nuts, chia seeds, coconut shreds, and berries for a hearty meal that takes very little time in the kitchen.
Yogurt parfaits make a simple breakfast or no-cook dinner option. Layer yogurt, granola, and fresh fruits in a glass and enjoy. Alternatively, blend a smoothie bowl with your favorite fruit, yogurt, and protein powder for a cool and refreshing meal.
