Ingredients Needed
- 1 pound butternut squash, cubed (approximately 4 cups)
- 1 pound fettuccine
- ¾ cup heavy cream
- 3 tbsp unsalted butter
- ¾ c freshly grated parmesan
- 1 tsp ground nutmeg or ½ tsp freshly grated nutmeg Kosher salt
How to Make Butternut Squash Alfredo
Step 1. Add the squash, heavy cream, butter and ¾ cup of water to a large saucepan, bring to a boil.
Step 2. Reduce to simmer and let cook until the squash is tender enough to be broken with a fork.
Step 3. Add to blender or use an immersion blender to puree until creamy and smooth. Add the nutmeg and kosher salt.
Step 4. In the meantime, prepare the fettuccine according to the package directions.
Step 5. Before straining, reserve about ¾ cup of the pasta water.
Step 6. Add the strained pasta and parmesan to the pureed squash mixture and stir until well-coated. If you need to thin the sauce, add the reserved pasta water 1 tablespoon at a time.
Step 7. Sprinkle nutmeg and parmesan on pasta before serving if desired.
