Easy Batter Rolls | Quick Yeast Rolls You Can Make Ahead

There’s nothing quite like the smell of fresh-baked rolls wafting through the kitchen—and this easy batter recipe makes it possible any day of the week, no fuss required.

If there’s one thing I’ve learned over the years, it’s that homemade bread has a way of turning an ordinary meal into something special. It doesn’t have to be complicated—sometimes the best recipes are the ones written on an old index card with a smudge of flour on the corner and a note that says “keeps up to 1 week” like a whispered secret from one homemaker to another.

This recipe for Easy Batter Rolls has been in my collection for years. I can’t remember where I first found this recipe, but it’s one that’s I’ve made on repeat for over twenty years – anytime I want to serve fresh yeast rolls but only have a few minutes.

It’s the kind of recipe you pull out when you want fresh bread with dinner but don’t have time (or energy) for anything fussy. No kneading. No rolling. Just mix, rest, and bake. And don’t get me wrong, I love making fresh yeast bread that takes a few hours to make, but sometimes I just need something quick.

These rolls are tender, slightly sweet, and golden on top. They pair beautifully with soup, stew, or even a hearty plate of beans and greens. And if you’re lucky enough to have leftovers, they’re perfect warmed up for breakfast with a pat of butter and a drizzle of honey.

What I love most?

You can make the batter ahead of time and store it in the fridge for up to a week. Just scoop into muffin tins and bake fresh whenever the mood strikes. That means homemade bread—on a Tuesday. Without a lot of effort. That’s the kind of homemaking win we’re all looking for, right?

Easy Batter Rolls Recipe

Ingredients:

  • 1 package yeast (or 2 ½ tsp)
  • 2 cups warm water
  • ¼ cup sugar
  • 1 egg
  • 4 cups self-rising flour
  • ¾ cup oil

Don’t have self-rising flour? Just mix:

  • 1 cup all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
    (Use this mix in place of each cup of self-rising flour.)

Instructions:

  1. In a large bowl, combine yeast, warm water, and sugar. Let sit for 5 minutes.
  2. Add the egg and whisk.
  3. Stir in the flour until combined.
  4. Blend in the oil until the batter is smooth.
  5. Pour into a covered container and refrigerate until ready to use.
  6. When ready to bake, spoon batter into greased muffin tins (about ¾ full).
  7. Bake at 375°F for 15–18 minutes, until golden brown.

Makes about 16–18 rolls.
