There’s nothing like a fresh tomato in the middle of July. Juicy, sun-ripened, and so full of flavor it barely needs anything else. Whether they’re spilling out of your garden beds, stacked high at the farmers market, or just sitting pretty on your kitchen counter, summer tomatoes are one of those simple pleasures that feel a little bit magical.

Here in Kentucky, once the tomatoes start rolling in, I find myself slicing them for everything—on a piece of buttered toast, over a warm bowl of grits, or just with a sprinkle of salt and pepper. I love serving a plate of sliced tomatoes, cucumber, and banana peppers from the garden every day as part of our meal.

You really don’t have to do much to enjoy them! Oh, and my absolute favorite way to eat a fresh tomato – other than a tomato sandwich – is on a leftover homemade, buttered biscuit. Yum!

My garden tomatoes are just now starting to turn red and I’m so excited! The only tomato plants that did well for me this year were the Roma’s, which, I mean, obviously I’m glad they’re doing well. I’m looking forward to making some fresh salsa and more with the Romas – but I really hoped to also have lots of slicing tomatoes!
