Some days you just want to eat some good comfort foods, you know? For me, when it’s cold and wet outside or overcast, it just makes sense to serve something warm, cozy, and comforting to the body and soul.

What can you add to soup to make it more flavorful?

#1 A well seasoned soup is going to be salted well (but not too much). It’s important to taste test your soup a few times until it tastes perfect to you. I often ask one of my girls to come in and taste the soup before we eat to make sure I got it right.

#2 Browning or searing your meat beforehand if the soup is not vegetarian adds more flavor. Also, sauteeing your onions, celery, carrots, etc. until tender adds more flavor to the soup instead of just adding the chopped vegetables to the soup. You wouldn’t want to sautee vegetables that will get too soft when overcooked like broccoli though.

#3 Using broth instead of water also makes for a more flavorful soup. If the recipe calls for water, and you want to substitute broth, be sure to adjust the added salt. You’ll probably need less when you use broth.

What soups are good to freeze?

If you want to make a big batch of soup and freeze some for later, I recommend you choose soups that have a clear base (like broth or water) and not soups that have a cream base. Some soups that freeze well are:

  • bean or lentil soups
  • vegetable soups
  • broth based soups
  • pureed soups

What kind of soups are best for when you have a cold?

When I’m sick or my kids are sick, I love serving some hearty chicken noodle soup, chicken and dumplings, or a hearty vegetable barley soup.

How can I fix a soup that has too much salt added?

You can either add more liquid (water, milk, etc) or add a potato or two to the soup which will absorb some of the salt.
